I picked out a big live catfish from the Chinese grocery store today. The guy beat it on the head win a hammer, gutted it and threw it on a bag for me. While I was making the dish called ‘whole steamed catfish with black bean sauce’ the fish was still moving. This has always been my favorite dish at the Chinese restaurant.
